Manager - Jim Fauver
Before coming to Castle Valley Outdoors, Jim owned and operated his own wingshooting operation. Jim has always loved German Shorthair Pointers and has been training them for wingshooting for more than twenty years. Jim has a background in architecture and had the opportunity to remodel the Pioneer Lodge and design and build the Muddy Creek and Castle Valley Lodge. Jim is the former Assessor for Emery County where he served for almost twenty years. Jim resides in Orangeville, Utah with his wife and four daughters.
Master Hunting Guide - Jeremy Lake
Jeremy has spent his whole life in the outdoors, from collecting insects, rocks, fossils, and antlers, to hunting, fly fishing, trapping, hiking and camping. If it has anything to do with nature or the outdoors Jeremy wants to know everything there is to know about it. At a young age he found an interest learning and studying about the ancient Indian cultures native to this area. He is also fascinated with the plant life in our deserts and mountains and has studied them for most his life. He started hunting at the age of 12 and it has been a passion of his ever since. Jeremy has been blessed with a wife and four boys who all share his passion for hunting and the outdoors, and are very supportive of the labors of his work. One of the things Jeremy enjoys most about his work at Castle Valley Outdoors is the opportunity to meet so many wonderful people from all over the world. Jeremy is truly passionate about his work and it shows in all aspects in his position.
Master Hunting Guide - Katlin Bell
Katlin has been guiding professionally for 8 years. He loves the outdoors and all that Mother Nature has to offer. He is perhaps one of the most experienced bear and lion hunters in the state of Utah. Katlin personally trains his hunting dogs to hunt these animals which are found in the hostile and rough terrain that South Central Utah and the west has in abundance. Hunting is truly a passion for Katlin. He is uniquely skilled, possessing the ability to sense, read, and understand the environment which his dangerous quarry is located. During the off season Katlin is a proficient farmer. While farming he has developed an understanding of upland game habitat and appreciates its important status as superb game birds in Utah. Katlin has made many friends while guiding hunters from all over the United States and his clients request him as their guide year after year. Guiding clients for CVO is what Katlin loves to do and he looks forward with anticipation to every new guiding season.
Executive Chef - Bonnie Swenson
While cooking for her family, Bonnie was inspired by the famous Chef Julia Child. These were the years of public television and Julia Child was on TV every weekday at noon inspiring men and women to greater culinary heights. Bonnie was motivated by Julia to prepare family meals that were both delicious and visually satisfying. Bonnie’s incredible skills in the kitchen vaulted her to instant culinary fame throughout Emery County. In 1984 she opened up her own successful catering business. When important dignitaries came to Emery County she was the only Chef that was called upon to do the job. Consequently, she has personally cooked for every Governor in the State of Utah since 1984, a feat that few Utah Chef’s can boast. Bonnie loves to prepare meals for the Guests of Castle Valley Outdoors. Cooking for her family and CVO guests truly bring her great satisfaction and happiness.
